The Art and Science of Winemaking


Wed., August 27, 2008 | 11am-2pm | San Jose, CA


Join Prof. Phil Crews of UC Santa Cruz to uncover the chemical mysteries of winemaking.

Wine quality and winemaking approaches have been debated for hundreds of years. A 21st century approach to winemaking can be very scientific because many aspects of this complex system appear to be understood. For example, Wired Magazine reported on the Grapes of Math in an comprehensive article to underscore that during the last decade consulting companies have emerged to help winemakers craft award winning wines. This approach uses databases created with the latest techniques of bioanalytical chemistry. On the other hand many subscribe to the idea that successful winemaking can be achieved by just using the right-side of the brain. An overview of some recent advances in winemaking technology will be reviewed. The left-brain vs. right brain approaches to wine creation will also be explored using case examples illustrated by sensory evaluation.

All registrants will be invited to attend the Annual BioCenter Summer BBQ immediately following the winemaking seminar.

The Series features lecturers and panel discussions from academic and industry labs who will offer their perspective on the application of chemistry to their research areas. This first session of the Series will be presented by Ving Lee, PhD, Senior Vice President, Research, Limerick BioPharma.
